Chocolate Coated Nuts & Seeds Energy Balls


INGREDIENTS


1/2 cup (50 g) almonds, I use activated

1/4 cup (30g) cashews

1/4 cup (30g) sunflower seeds

1 tbsp nut or seed butter of choice

10 (200 g) medjool dates, soaked if dry

2 tbsp cacao powder

1 tbsp hempseeds

Pinch salt

HOMEMADE CHOCOLATE


3/4 cup (75 g) cacao butter, melted (weight before melting)

2 tbsps coconut oil, melted

2-3 tbsp liquid sweetener of choice

5 tbsp cacao powder

Pinch salt

Vanilla essence (optional)



INSTRUCTIONS


1. In a food processor process first your nuts and seeds to rough flour consistency

2. Add nut butter, cacao powder, hempseeds, salt and pulse to mix

3. If dates are dry soak them in warm water for 10 minutes. Add dates to your mixture and process until dough comes together to a crumbly consistency

4. Roll into balls, makes 12-15 energy balls

5. Place them in the fridge for 30 minutes to set


CHOCOLATE


1. Meanwhile make the chocolate.

2. Melt cacao butter together with pinch of salt, and liquid sweetner in a bowl. I use bain-marie (double boiler) method. Fill a pot with 1-2 cm of water over low heat, place the bowl with cacao butter on top until cacao butter melts.

3. Remove bowl carefully making sure no steam or water get into your liquid.

4. Add melted coconut oil and cacao powder to bowl and mix until powder dissolves. If sauce seems very thin, wait till it cools down and thickens up.

5. Dip your energy balls into chocolate and sprinkle with anything your heart desires (Meldon sea salt, freeze dried fruits, cacao nibs or chopped nuts or seeds)

6. Place in fridge to set and ENJOY.


Back in the days, I loved making energy balls. They’re quick and wholesome. Loved stuffing my face 😅 with them after a crazy gym session. They’re definitely one of my go-to snacks to satisfy my sweet tooth. Are you a fan? 💫
